Preparation:
Strain one cup (150 gms) gram flour in a mixing bowl
Then add 1/2 cup (75 gms)Semolina (Rawa)
Followed by 1/4 cup of whisked curd
Then add water in small portion to make a thick and dense batter
Add salt as per taste
1/2 tsp of Ginger
Add 2 tsp lemon juice and mix well
Add 2 tsp Sugar
1/4 turmeric powder to get the yellow colour
Thick and dense batter is now ready
Keep aside the batter to set and rise a little
By the time grease the Idli stand. Apply oil on every mold
Now as the batter is ready add eno fruit salt.
Note - Do not stir the batter to long and do not whisk it too much
Now pour the batter into the molds.
Arrange the molds on the stand
Simmer 2 cups of water in a vessel
Place the idli stand inside it and cover it
Let it simmer for 15 minutes on medium flame
Check the dhokla after 15 minutes
To check, insert a knife inside the idli, it should come out clean
Take out Idli Dhokla from the vessel and let it cool
Meantime, we will prepare tempering for the idlis
Add oil in a vessel and when it is hot add 1/2 tsp red mustard seeds
Add 10-12 curry leaves and saute for a while
Now add 1/2 cup of water in the tempering
Then add 1 tsp sugar and salt
Let is simmer till the sugar gets dissolved
Now remove Idli from the stand and pour the tempering prepared on it
Garnish it with some grated coconut and fresh coriander
Yummy Idli Dhokla is ready to be served.
